How do I switch between noise cancellation modes?

You can press and hold the Beats logo button on either earbud to switch between Active Noise Cancellation, Transparency mode, and Off. Alternatively, on iOS or iPadOS, open Control Center, touch and hold the volume slider, tap the Noise Control icon, and select your preferred mode. (Page 3-4)
